Fried chickens are an incredibly easy meal to make at home, and they always turn out great. If you let the wings refrigerate for at least an hour or more, it will ensure they are extra crispy and more flavorful. So, what makes these wings unique? It is the Xinjiang-style spices that include red chilli flakes, cumin and peppercorns. The Xinjiang style chicken is famous in Beijing, most vendors would marinate the chicken overnight, the next day they would deep fry it and then mix in the delicious Xinjiang spices.
To make your chicken wings you will need to place them in a bowl. In a separate bowl, mix, paprika, 1 ½ tablespoons of red chilli flakes, white pepper, ground Sichuan peppercorns, cumin, salt and sugar together. Add the spices to the chicken wings and mix thoroughly to make sure the chicken is properly coated. Save some of that spice mixture for later.
Marinate this mixture overnight, or for as long as you can, a full 24 hours will give you the best results.
Once you take them out from the refrigerator, make sure they have reached room temperature before you cook them.
Mix corn starch, flour and a beaten egg to the wings and use a spatula to carefully combine it with the wings. Make sure the wings are only coated with a thin batter and then prepare the oil for cooking. Heat the oil and then deep fry the wings for 5 minutes in small batches.
Once the chicken is done, fry them again for a second time in the same oil but this time just for 2 minutes until they are golden and crispy.
Once they are cooked through, drain the oil and place the wings in a bowl and toss it in the remaining spice mixture. And that’s it you are done, enjoy the scrumptious spicy wings.
